According to what she confirms, Hana Tohamy, the coordinator of the Shoka and Miqdaf project, Umm Nada came to the foundation to seek work in the women’s workshop of the Free Nile Foundation, and she explained during the job interview that she was good at cooking and wanted to open her own project in this field, which met a need: the institution of securing food for its employees after having bet entirely on buying in restaurants and stores.

Buying food overseas has resulted in environmental pollution due to the bags, cans and environmentally harmful materials that come with it, in addition to the difficulty of getting food to us at home. center of the island, which requires the use of boats to deliver food. After Um Nada’s presentation, we decided to try her food, and we liked it, so we decided to help her develop her talent and support her in creating new dishes and various cooking methods. cooking. Umm Nada has been able to provide food for dozens of people on the island, and we are working with the Foundation to help her create an integrated kitchen, as she still depends on her house to cook, and then the food is transferred to the Foundation or to individuals. The Fork and Paddle Project food is environmentally friendly, as it uses reusable and non-polluting materials. Food waste is used as fodder for animals or birds on the island. We reuse cooking oil used in frying to produce soap for washing and cleaning purposes. In the project, we work on agriculture on the island to benefit from agricultural products in the kitchen project. We provide job opportunities for other women with Umm Nada, and they all benefit from the idea.

For her part, Umm Nada told “Sky News Arabia” that the choice of the name “Fork and Paddle” for the project corresponds to the nature of the environment on the island, where the paddle is used in boats, and the fork refers to the food provided, as well as the name symbolizes the nature of the Nile, the land and the other environments of the island.

Umm Nada explained that she was able to achieve great notoriety in the world of eco-friendly cooking, adding that her journey has gone through many turns:


I am good at cooking and enrich my skills by watching cooking shows in various media, and I can imitate meals that are presented with extreme precision. My husband was working abroad, and when he returned to Egypt, I decided to help him with the burdens of life through a cooking project, especially since we have 5 daughters. I applied for a job opportunity at Free Nile and asked to open a kitchen to provide food for workers, including that we sell food by door-to-door delivery, and the Foundation welcomed the idea. I started to prepare sample dishes and send them to employees on an experimental basis. I achieved great success, and everyone liked my food and preferred it to what was bought abroad. It provided employment opportunities for many island women, especially on occasions when they had to provide large amounts of food. We produce food that does not harm the environment, and what overflows and is suitable for food, we offer to the needy, and what is not suitable for food turns into fodder for animals and birds, and we do not use any environmentally harmful materials. I dream of owning an international kitchen and am working on my literacy by learning to read and write to get nominated to the Fork and Paddle project for an eco-friendly kitchen.
